Chef Michelle Quire - Granny Schmidt's Wedding Cakes
Michelle Quire from Granny Schmidt's Wedding Cakes in Emmaus joined our 69 New Sunrise Crew on June 26, 2009.  She cooked up a Turtle Cake and the fillings.  

Turtle Cake
1 lb Egg Yolk
9 1/3 oz. Granulated Sugar
10 2/3 oz. Cake Flour
Pinch Baking Soda
1/3 oz. Baking Powder
Salt to taste
4 oz. Butter
9 1/3 oz Semi-sweet chocolate
10 2/3 oz Egg Whites
6 2/3 oz Granulated Sugar 

  1. Gather equipment & ingredients
  2. Place egg yolks and 1 lb 12 oz of sugar in bowl. Place over double boiler
  3. Stir continuously until it reaches 120*
  4. Remove from heat and place in mixer.
  5. Whip on the highest speed to full volume
  6. Sift together the cake flour, baking soda, baking powder & salt.
  7. Melt the butter keep it on the cool side
  8. Melt the chocolate do not heat it higher than 122*
  9. Add the melted butter to the melted chocolate and combine well
  10. Add the sifted dry ingredients into the whipped egg yolks
  11. Fold in the combined butter-chocolate mixture into the yolk mixture
  12. In another bowl, whip egg whites to medium peak, slowly add 1lb 4 oz of the granulated sugar to make a meringue.
  13. Carefully fold the meringue into the batter
  14. Scale 1lb 6oz of batter into a lightly greased 9 inch cake pans
  15. Bake at 375* until firm and dry in the center
Japonaise Layer
4 oz. Egg Whites
4 oz. Granulated Sugar
4 oz. Confectioner Sugar
4 oz. Nuts Crushed
Pinch of Cream of Tartar
 
Whip whites with sugars and cream of tarter
Fold in nuts.
 
Caramel Mousse
1 oz Gelatin
1 8 oz Jar Caramel
2 Cups Heavy Cream (whipped)
Whip Heavy Cream add gelatin & caramel
 
Ganache
3 Cups Heavy Cream
2 Cups Chocolate
¼ Stick Butter
 
Boil Heavy Cream add Chocolate till melted.
Take off heat
