Sausage and pepper strata

1 lb italian sausage,cooked and small dice
1 green pepper, small dice
1 onion, small dice
2 cloves garlic small dice
4 cups bread cubes
1 cup shredded cheddar cheese
1/4 cup grated parmesan
1/4 cup chopped parsley
4 eggs, whisked
2 cups, cream or milk
salt, pepper, basil, oregano to taste

Saute the sausage, peppers, onions, garlic until the vegetables are soft-  combine with the rest of the ingredients- let sit 15 minutes to let the bread absorb the liquid- pour into a casserole, or individual muffin pans for an appetizer size- bake at 325 until set- 30-40 minutes for large one- 15-20 minutes for smaller sizes

Pork tenderloin with pineapple jalapeno salsa

Marinate pork tenderloin in your favorite marinade or dry rub- Jerk rub is good for this salsa

2 cups small dice pineapple
1 jalapeno , minced
1/2 cup minced red onion
1/2 cup minced red pepper
juice and zest of one lime
juice and zest of one orange
2 TB. chopped cilantro
salt and pepper
cumin to taste

Grill pork to desired doneness- let rest 10 minutes  thinly slice and top with the salsa
