Chef Jonathan Davis: Pearly Baker's Alehouse
Chef Jonathan Davis of Pearly Baker's Alehouse and his daughter joined our 69 News Sunrise crew on Friday October 16th.  He showed us how to cook up some special pork chops and bison burgers.  Pearly Baker's Alehouse is located in Centre Square in Easton.  
Mohegan Pork Chop with Roasted Fingerling Potatoes & Cannellini Beans: (serves 4)
Pork Chops:
  • (4) 8-10 oz. double cut pork chops (with or without bone)
  • 2 tablespoons of Montreal Steak Seasoning
  • Drizzle of olive oil
 
Rub your pork chops with spices, drizzle with olive oil, and grill to 165 degrees.
 
Cannellini Beans:
  • 1lb. Of bacon (good smoked bacon, thick sliced) chopped
  • 1 large onion, chopped
  • 5 cloves of garlic, chopped
  • 2 cans of Cannellini beans (white kidney), drained & rinsed
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of Worstershire sauce
  • 2 cups of beef broth
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 cup honey
  • 2 tablespoons chopped parsley
  • 6oz. Yuengling Lager
 
Render bacon, remove & drain. Sautee onions in bacon fat, add garlic when onions start to sweat. Add rinsed beans. Deglaze with beef broth. Add vinegar, salt, pepper, balsamic, Worsteshire & Yuengling and reduce slightly. Add honey, tomato paste and reduce to desired consistency. Remove from heat and add parsley. Best when made one day in advance.
 
Fingerling Potatoes:
  • 1 ½ lbs. Of fingerling potatoes
  • 2 teaspoons olive oil
  • 1 packet of Ranch dressing mix
 
Take whole, multi-colored, fingerling potatoes and submerge in cold water. Bring to a boil on high for about 20 minutes, or until fork tender. Pull potatoes out of boiling water, and immediately plunge into ice water, separating colored potatoes. Slice potatoes in half. Toss halved potatoes in olive oil and ranch seasoning packet. Put on a sheet tray and bake at 450 degrees until edges are brown & potatoes are heated through.
 
Bison Burger with Horseradish Mayonnaise & Homemade Yam Chips: (serves 4)
  • (4) 6-8oz. Bison patties
  • 4 Kaiser rolls
  • 4 pieces of leaf lettuce
  • 1 tomato, cut into 8 slices
  • 8 slices Colby cheese
  • 1 tablespoon Montreal Steak Seasoning
 
Season meat & grill to desired temperature. Assemble lettuce & tomato on rolls. Add horseradish mayo to bottom roll. Melt cheese over cooked patty under the broiler.
 
Horseradish Mayo:
  • 4 tablespoons mayonnaise
  • 2 teaspoons grated horseradish
  • salt & pepper to taste
  • ¼ teaspoon garlic powder
 
Blend all ingredients together.
 
Homemade Yam Chips:
  • 1lb of yams, sliced thin
  • 2 cups of vegetable oil
  • 1 tablespoon salt
 
Peel yams & slice thin, using a mandolin. Deep fry sliced yams in heated vegetable oil, or use a deep fryer. Remove from oil & add salt. These are a house specialty at Pearly Baker’s, made fresh daily!
 
Weyerbacher Heresy Brownies: (serves 10-15)
  • ¾ cup unsalted butter
  • 4oz. Unsweetened chocolate
  • 4 large eggs
  • 1 ¾ cup sugar
  • 1 ½ teaspoon vanilla
  • ¾ cup all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 4 cups of Weyerbacher Heresy Stout
 
Pre-heat oven to 350 degrees. Butter a 13x9x2 baking pan. Pour 4 cups of Weyerbacher Heresy Stout into a pot, simmer for at least one hour, or until it is reduced to ¼ cup. Stir together butter & 4oz. Chocolate in a pan until smooth. Whisk eggs & sugar until pale yellow. Gradually add warm chocolate. Add vanilla & reduced (1/4 cup) Heresy Stout. Add flour. Add chocolate chips. Bake for approximately 25 minutes, until center is cooked. Toothpick test should be slightly fudgie.
